Polenta with Oven Roasted Vegetables

There’s always something about the taste of vegetables after coming out of the oven. I like them slightly crispy and naturally sweet with olive oil, sea salt, and ground pepper. Yum!

I was strolling down the Trader Joe’s isles the other weekend and came across precooked polenta. My mom has made this before and I had totally forgotten about it! Its so easy and something you don’t see every day. So, you guessed it. I gasped, smiled and put it in my cart beaming from ear to ear. Normal? Probably not. Amazingly delicious dinner? You bet!

What goes into my meal?

2 peppers sliced in thin strips, any color. I used one yellow and one orange
2 zucchinis sliced thinly
1/2 roll of cooked polenta, sliced
1/2 jar of garlic tomato sauce
2 cups of steamed kale (of course)
1 tbsp olive oil
1 tsp of salt, garlic powder, and pepper

Preheat the oven to 350 degrees. Slice the peppers and zucchini, toss in 1 tablespoon of olive oil with the salt, pepper, and garlic powder. Lay on a cookie sheet, in a single layer. Roast the vegetables for 15-20 minutes.

While the vegetables are cooking, slice the polenta, spray a pan with olive oil, and cook the polenta, about 5 minutes on each side. At this time, steam kale or collard greens in a pan over medium heat with a splash of water.

Plate the kale, then place the polenta around it. Place the vegetables over the kale and polenta. Heat 1/2 of the jar of tomato sauce in a pan and pour the warm sauce on top. This makes 2 meals. Good for a date night or for dinner and lunch the next day!

The tomato sauce is not pictured above! It didn’t look good, but I promise it tasted good!

  1. I have never made polenta before. I think I should give it a try.

  2. I love polenta. It’s a nice change from bread or pasta, both of which contain gluten. This looks delish!
